We’re diving deep into a Florida favorite! There are endless ways to prepare seafood, but local Chef Justin Fields is keeping it contemporary with global flavors, innovative preparations and dare we say, “sexy” spins on our favorite seafood dishes. With an island spin, this demonstration seminar will enlighten our mindsets (and taste buds!) to a new spectrum of seafood that will have you hooked from dock to dish.



Growing up in the Bronx, Justin Fields was influenced by the hustle and bustle of NYC and from a young age had a very creative personality. The multi-cultural environment of the city, mixed with his love to eat would be the building blocks of his culinary journey. In 2000, Justin enrolled into the Culinary Arts program at JWU in Providence, RI before moving to Maui, Hawaii for an internship to work at Roy’s Kahana Bar and Grill. Justin then continued his education with JWU and received his BA in Restaurant Management. From there, he landed a position as sous chef trainer in Philadelphia for Roy’s Restaurant, before working his way up to Chef Partner of Roy’s Sarasota in December of 2008. In 2013, he transitioned into the Corporate Chef / Research & Develop world, and was promoted to Executive Chef / Director of Research and Development, playing an integral role in building brand recognition for multiple concepts. Chef Justin added an International presence to his arsenal in 2020 becoming the culinary lead for multiple international concepts, expanding his brand coverage and global cuisine knowledge. Justin lives locally just north of Tampa with his wife and three children.
